Harold Peash Maitre d’ Harold has learned the finer details of gastronomy over the course of many years of service at Chez Matilde. Rising through the ranks from bussing to Maitre he has put countless hours into Chez Mathilde’s training and proficiency programs to become the top of his trade. His stewardship on the floor and deeply rooted care for our guests ensure an unforgettable evening for all who enter the "House of Matilda". Linda Pool Executive Chef Amsterdam born and raised Linda Pool has worked her way up thru the ranks of the kitchen thanks to her enormous enthusiasm and talent.
Linda’s first real experience in the kitchen came during an internship at the famous hotel restaurant Dikker & Thijs in Amsterdam. After her graduation she worked for several restaurants in Amsterdam including “d’ Vijff Vlieghen” and Altea Hotel. Exploring new horizons Linda joined the Aruba Restaurants group in 1994. After 2 years at Chez Mathilde as Chef de Partie, Linda took on the challenging position of Sous Chef for the 4 restaurants located at Reina Beatrix Airport. Returning to Chez Mathilde as Sous Chef she once again showed her enormous dedication, knowledge and motivation. With the "extreme make-over" of the restaurant, Linda now shares her talents, motivation and dedication towards staff and guests as our Executive-Chef.
